Because no, angular momentum, spin or principal quantum numbers are not enough to describe particles. Physicist need MOAR and to describe quarks it is necessary to define a NEW ONE, and, sure, why not say... flavour quantum number? Because, of course, quarks are tasty and you can differenciate them by the way they sweeten your coffee. Other day, we can talk about colours... because they're also colored you know.
